Arugula, Roasted Walnut and Watermelon Salad

Arugula with field greens along with roasted walnuts and bite sized pieces of watermelon tossed with a Champagne vinaigrette.


Entrees


Roast Beef Tenderloin with Marchand Di Vin Sauce

Medallions of beef tenderloin served with a fantastic 3 stage Marchand Di Vin sauce.  Served with a beggar's purse with duxelle (French crepe stuffed with a wild mushroom stuffing and bound up with a green onion top) and roasted asparagus.


Redfish Filet Stars

A filet of redfish wrapped around a jumbo shrimp and poached in a wine, olive oil and spice mix to a perfect doneness and served with a wonderful lemon wine reduction sauce.  Roasted garlic mashed potatoes and sauteed baby vegetables.


Chicken Bonne Femme with Pontalba Potatoes

Fresh chicken breast, flash seared and then roasted to juicy finish and served with a beautiful blend of potatoes: Heirloom, Yukon Gold and Purple Potatoes seasoned and roasted in a saute of baby vegetables.
